Answer: There are two reasons we chose to specify Kosher salt. Firstly, the variances in the grain of salt will give you different measurements - Kosher salt being coarser then table salt. As well, table salt has additives to prevent it from caking; I find that it has a slight metallic taste because of the this. Kosher salt typically contains no additives.
